Schwerpunktthema ist der nachhaltige Lebensmittelkonsum. Hier insbesondere die Konsumentenpräferenzen und das Konsumentenverhalten. Zu den methodischen Kernkompetenzen gehören Choice-based Conjoint Analyse, Latente Klassenanalyse, Eye-Tracking und Neuromarketing mit funktioneller Nahinfrarotspektroskopie (fNIRS).

Stephan Meyerding ist seit 2019 Professor für Betriebswirtschaftslehre mit dem Schwerpunkt Marktforschung und Konsumentenverhalten an der Fakultät Gesundheit der HAW Hamburg. Meyerding ist 1983 in Hameln geboren und hat nach seiner Fachhochschulreife an der Fachhochschule Hannover und der Southern Illinois University Edwardsville Betriebswirtschaftslehre studiert. Danach arbeitete er als Wissenschaftlicher Mitarbeiter am Zentrum für Betriebswirtschaft im Gartenbau e.V. und wurde 2016 an der Naturwissenschaftlichen Fakultät der Universität Hannover promoviert. Meyerding arbeitete anschließend als Post-Doc am Lehrstuhl Marketing für Lebensmittel und Agrarprodukte der Universität Göttingen wo er sich 2019 an der Fakultät für Agrarwissenschaften habilitierte.
